My Favourite: Walnut + Roasted Pumpkin with... Extras?
Hi All, I hope this week's post can delight your taste-buds! For a long, long, long time I have loved almost any salad that has roasted pumpkin and walnuts in it! I think they are just the most superb blend! YUMMY. For a while I use to make a salad with rocket and spinach leaves, roasted butternut pumpkin, walnuts and fried bacon pieces. For the dressing I would make it simple with mostly mayonnaise and some pepper and lemon juice added. I found this salad to be a great crowd pleaser at any event I attended where the host asked for a potluck dish. In fact.. I often found that salad to be most popular among men, figure that. Must’ve been the bacon hahaha. For a few years I had forgotten about the just mentioned salad and instead started alternating other things with the flavour blend; to still include the roasted pumpkins and walnuts. That’s a must!
